Enjoy wine, enjoy life. That is Susie Selby’s approach to making wine – and we are the beneficiaries of such an indulgent philosophy! Founded in 1994 by Susie and her father, Selby wines was born from a dream and an affinity for old world wines. She will be on hand to tell the story as we taste a lineup of Selby wines curated by Beverage Director Mani Gonzalez and perfectly paired with a delicious dinner from Executive Chef Nils Tarantik.

First Course

Wine: Sauvignon Blanc 2017 (Russian River Valley)

Food Pairing: apricot tartlet: caramelized onion / potato / tarragon butter sauce
 

Second Course

Wine: Chardonnay 2016 (Russian River Valley)

Food Pairing: salmon crudo: chili-cilantro vinegar / roasted garlic aioli / lemon butter
 

Third Course

Wine: Merlot 2017 (Sonoma County)

Food Pairing: Wagyu Carpaccio: peppercorn-encrusted seared American Wagyu tri-tip / bacon-shallot jam / parmesan cheese / celery greens 
 

Fourth Course

Wine: Old Vine Zinfandel 2015 (Sonoma County)

Dessert Pairing: Gorgonzola & prosciutto en croute: red wine zabaglione
